Our speculoos is made in “Meetjesland”, a region between Bruges and Ghent. For centuries they have been baking a product here named “zoetekoeke”, a sort of gingerbread, which was the origin of speculoos. Typical for the recipes from this region are the honest taste and the fine, crispy texture.
